| tried another Johnathan menu last night Sugar cane skewed jerk lobster with mango and pumkin salad - absolute fab
- 4 medium spiny lobsters
- 2 x 15cm length of sugar cane, trimmed and cut into thick skewers
- 4 tablespoons olive oil
- 4 tablespoons jerk seasoning
- 3 mangoes, peeled and thinly sliced with a mandolin
- 2 fennel, trimmed, bulb thinly sliced
- 250gm pumpkin, peeled, seeds removed and thinly sliced with a mandolin
- 12 stems of shadow bennie, finely shredded (you can substitute with coriander)
- ½ fresh coconut, shell removed, flesh thinly sliced with a mandolin
- Handful rocket leaves, washed, stems removed
- 5 tablespoons pumpkin seed oil
- 2 limes, juiced
- 2 tablespoons maple syrup
- 4 tablespoons lightly-toasted pumpkin seeds
- Rock salt
- Freshly ground pepper
had a prob trackin down pumpkin seed oil but finally managed |

| having some friends around for dinner so searched my vast compendium of menus and came up with these:
for starters:
Nectarine and chicken salad 1/4 cup oil 1 tblspn vinegar 1 tblspn lemon juice 1/4 cup basil leaves, chopped finely 1/2 tspn nutmeg 1/2 tspn white pepper 500g cooked chicken breasts, cut into strips 4 nectarines, stones removed, sliced 1 gourmet lettuce, washed and torn Combine oil, vinegar, lemon juice, basil, nutmeg and pepper in a screw-top jar. Shake well. Place chicken and nectarines into a large bowl. Pour dressing over. Marinate in the fridge for about 30 minutes. Arrange lettuce on individual plates. Top with chicken and nectarine mixture to serve.
and for main:
Mushroom Lamb and Broccolini Stir Fry 2 tblspn soy sauce 2 tblspn oyster sauce 2 tblspn honey 300 g Trim lamb loin or fillet, thinly sliced 2 tblspn peanut oil 1 brown onion, cut into wedges 300 g button mushrooms, halved 1 bunch broccolini, washed and chopped 1 red capsicum, thinly sliced Steamed rice, to serve Combine soy sauce, oyster sauce and honey in a medium bowl. Add lamb and toss well to coat. Drain, reserving the marinade. Add half the oil to a wok and heat over high heat. Add the lamb and stir-fry for 2 minutes or until brown. Remove to a plate, cover and keep warm. Add remaining oil to wok and stir-fry onion for 1- 2 minutes. Add mushrooms and broccolini and stir-fry for 1-2 minutes. Add capsicum, reserved marinade and lamb and stir-fry for 2 minutes or until capsicum is tender. Serve with steamed rice. fresh, crusty bread.
but for the life of me can't find a good sweet to finish with - any suggestions?? |

| Don't think I could fit a sweet in after all that! I rarely eat a pud - personally, I prefer a good cheeseboard. |

| Orzo "paella" today with prawns, chorizo, peas, red peppers, chicken thighs.
