Mmm... sounds yummy!Tonight here, will be home-made chilli, wholegrain rice and something green with it. Will have to watch my greens intake (although I love it) - I take Warfarin and my INR blood test level was up this week (don't know why!). |

Ormskirk brawn - a breakfast dish Take a pig’s head, split it open, remove the brains, sprinkle thickly with salt and let lie for 12 hrs. Then rub it with one and a half ozs of saltpeter and 6 ozs of moist sugar. Put into a pickle of made of 1 lb of of bay salt boiled in 4 quarts of water, and allowed to get cold. Turn it every day for four days. Take up the head, wash it, and divide it as much as possible. Put it into boil in some clear spring water, with one and a half pounds of beef. Skin well and cook until the meat leaves the bone. Strain and cut up all the meat quickly into dice. Season with salt, black pepper, cayenne and nutmeg. Then return the stock to to the saucepan, put in the meat, let it boil up well, and pour into wetted molds. Turn out and serve when cold. |

| ELEPHANT STEW
- 1 medium elephant
- 2 (50 gallon) containers broth
- 500 lbs assorted fresh vegetables, chopped
- 2 rabbits (optional)
Directions
- Cut elephant into bite-size pieces.
- This takes about 2 months.
- Using large kettles, simmer equal parts elephant and vegetables with enough broth to cover.
- Cook for a couple days.
- This should serve about 500 people. If more are expected add the rabbits, but do this only if necessary.
- Most people don't like to find hare in their stew.

| Regarding the brawn (above), I watched my grannie make it from her house pig when I was a kid. Don't remember it had beef in it.

| tonight your time 8.44am will have:
BAKED MULLET 2 pounds mullet fillets 2 teaspoons lemon juice Dash of pepper 6 slices bacon 1 cup soft bread crumbs 2 tablespoons chopped parsley Wash cleaned fish and place fillets in a single layer in a greased baking dish, 12 x 18 inches. Sprinkle with juice and pepper. Fry the bacon until crisp, remove from fat and crumble. Cook onion in bacon fat until tender. Remove from fat and arrange onion evenly over fillets. Combine bacon, bread crumbs and parsley. Sprinkle mixture over fillets. Bake in a moderate oven at 350 degrees for 25 to 30 minutes or until fish flakes easily when tested with a fork. Makes 6 servings.
