| Going vegan today with pasta & a ratatouille dressing/sauce.
We might end up putting some Parmesan cheese on it - which ruins the vegan aspect, though.
My ratatouille:
1 medium courgette 1 medium aubergine 1 red pepper 1 yellow pepper A few cherry tomatoes (6 - 8) 3 or 4 shallots 3 or 4 cloves of garlic (or more) or one whole bulb/head 1 can chopped tomatoes A good glug of olive oil (ordinary type, not EV)
Cut the courgettes, peppers,aubergine and shallots into pieces about the same size as the cherry tomatoes. Place all in an ovenproof dish together with the garlic cloves or whole bulb. DO NOT cut these up. Sprinkle with olive oil, salt & pepper and bake in a fairly hot oven for 20 -30 minutes. Then add the chopped tomatoes from the can, mix well and return to the oven (at a medium setting) for about one hour.
Remove from the oven, take out the garlic bulb (if used) and separate the cloves, remove the skin and place back in with the main mix.
You will find the garlic has lost all of its pungency and is soft and sweet. I like it cooked like this and spread on toast. It's not skinky and you don't get people choking all around you from the smell |

| Roast leg of pork, apple sauce, roast potatoes, carrots & parsnips, mixed broccoli & cabbage, gravy.
Huge piece of meat which will keep us going for several days. |

| Ham hock terrine to start then.... Pork chops, dauphinoise potatoes, buttered leeks and carrot and swede mash....then Bread and butter pudding made with brioche. |

| Ice cubes and lots of them. Much too hot today and believe me not pleasant heat. Normally followed by locusts.
