Asda prepared Lamb Bhuna and Pilau rice. Quite hot but that's OK with me. :)

tried another Johnathan menu last night

Sugar cane skewed jerk lobster with mango and pumkin salad - absolute fab


  • 4 medium spiny lobsters
  • 2 x 15cm length of sugar cane, trimmed and cut into thick skewers
  • 4 tablespoons olive oil
  • 4 tablespoons jerk seasoning
  • 3 mangoes, peeled and thinly sliced with a mandolin
  • 2 fennel, trimmed, bulb thinly sliced
  • 250gm pumpkin, peeled, seeds removed and thinly sliced with a mandolin
  • 12 stems of shadow bennie, finely shredded (you can substitute with coriander)
  • ½ fresh coconut, shell removed, flesh thinly sliced with a mandolin
  • Handful rocket leaves, washed, stems removed
  • 5 tablespoons pumpkin seed oil
  • 2 limes, juiced
  • 2 tablespoons maple syrup
  • 4 tablespoons lightly-toasted pumpkin seeds
  • Rock salt
  • Freshly ground pepper


had a prob trackin down pumpkin seed oil but finally managed

Beef hot-pot for us today, left over roast beef and braised steak, with potatoes, carrots and onions.

The freezer clearing continues and today we have some meat, as yet unidentified, which will be turned into a curry.

having some friends around for dinner so searched my vast compendium of menus and came up with these:

for starters:



Nectarine and chicken salad
1/4 cup oil
1 tblspn vinegar
1 tblspn lemon juice
1/4 cup basil leaves, chopped finely
1/2 tspn nutmeg
1/2 tspn white pepper
500g cooked chicken breasts, cut into strips
4 nectarines, stones removed, sliced
1 gourmet lettuce, washed and torn
 Combine oil, vinegar, lemon juice, basil, nutmeg and pepper in a screw-top jar. Shake well. Place chicken and nectarines into a large bowl.  Pour dressing over. Marinate in  the fridge for about 30 minutes. Arrange lettuce on individual plates. Top with chicken and nectarine mixture to serve.


and for main:





Mushroom Lamb and Broccolini Stir Fry
2 tblspn soy sauce
2 tblspn oyster sauce
2 tblspn honey
300 g Trim lamb loin or fillet, thinly sliced
2 tblspn peanut oil
1 brown onion, cut into wedges
300 g button mushrooms, halved
1 bunch broccolini, washed and chopped
1 red capsicum, thinly sliced
Steamed rice, to serve
 Combine soy sauce, oyster sauce and honey in a medium bowl. Add lamb and toss well to coat. Drain, reserving the marinade. Add half the oil to a wok and heat over high heat. Add the lamb and stir-fry for 2 minutes or until brown. Remove to a plate, cover and keep warm. Add remaining oil to wok and stir-fry onion for 1- 2 minutes. Add mushrooms and broccolini and stir-fry for 1-2 minutes. Add capsicum, reserved marinade and lamb and stir-fry for 2 minutes or until capsicum is tender. Serve with steamed rice.
fresh, crusty bread.

but for the life of me can't find a good sweet to finish with - any suggestions??

I rarely eat a pud - personally, I prefer a good cheeseboard. eat2

Orzo "paella" today with prawns, chorizo, peas, red peppers, chicken thighs.

Will give more detail later if successful.

Roast leg of lamb cooking at present.  This will be allowed to cool and eaten with salad.
