Traditional slow roast topside beef, veg, yorkies and gravy today. I already have the meat in the oven at 85C with a meat thermometer inserted to monitor progress. It will take 3 hours and will be slightly pink all the way through.

We are entertaining two friends who live in our road, Maurice was 100 years old last December and is the most wonderful man, His girl friend Lesley is a mere 91. Libby and her are great friends.

I expect that by 5 o'clock we will have one empty champagne bottle, 2 empty Malbec bottles and an empty bottle that earlier was full of NZ Marlborough Sauvignon Blanc wine.

I may not be on the forum this evening.

We won't bother with them again,we found them to be too bland, they need marinating

haven't tried emu yet - they run too  fast even for the dogs and have lethal claws on the feet with which to kill you with - a few farmers lads sometimes have collisions with them on motorbikes [ the lads not the emus] and do manage to kill them and their bikes and end up in EU

Kangaroo went down well with us. I think I posted this pic before but behind the tree were 3 carcasses of Kangaroo. We were waiting for the refrigerated truck that never turned up. While we waited we ate most of one carcasse the rest got too stinky even for us. Back home we had hunted deer and pig but not, of course, kangaroo, so we were a bit in the dark about what was the best way to cook 'em, but they turned out pretty good despite our lack of expertise.

We always fry kangaroo steaks and burgers with plenty of fried onions. Ditto with Ostrich, buffalo and venison.

Tuna today, I think. Dry griddled (to get nice burned stripes) with watercress, rocket and tangerine/mandarin salad. Crusty bread.
