| As some on here know, I bought an Actifry which produces some of the best chips I have ever eaten.Its method is vaguely similar to Ms Lawson's in that the potatoes are introduced into cold fat and then the heating is started. The difference then is the quantity of fat used. Actifry uses about 60ml of oil per 1 kg of potatoes.
The resulting chips are crisp on the outside and fluffy inside but this does depend (as with conventionally cooked chips) on the variety of potato used. That being the case, I have tried a number of varieties of potato and not had any complete failures, just some types that don't crisp up so well and/or don't cook to a particularly fluffy or creamy inside.
Regarding Pumicestone's method: WHAT? Whatever those things result in being, they ain't chips. |

| Hi Pops seriously thinking of buying an Actifry and sort of held off as they are still quite expensive.
Thanks for that review has given me food for thought.

| Goldie, an Actifry does a lot more than fry chips. If you look up review and recipe pages you will see a number of different things that can be cooked very successfully.
Irene has one and it was she that persuaded me to take the plunge and buy. |

| I have been cooking perfect chips for years. Chipped spuds of any variety brought to boil in salted water and switched off immediately then drained and transferred to wok with cold sunflower oil. Bring to a good strong simmer then turn heat down to lowest setting until chips begin to colour. Turn heat up to high to finish off and voilà....perfect chips ! |

| I hate to correct you but of course there are fat-free chips We sometimes have them.....pre-boil chips in salted water, drain and transfer to oven dish, Cook 'til golden brown in oven at 180-200 degs |
