Andsome's lemon drizzle cake.


4 ounces soft margarine

6 ounces caster sugar

6 ounces self raising flour

2 eggs

3-4 table spoons milk

Grated zest of one lemon

 

Cream together the sugar and margarine, and blend in the eggs.  Mix in the other ingredients and put into a lined loaf tin,  Place into a COLD oven, then switch on to 180 degrees C, and cook for 45 to 50 minutes. (Ovens do vary).  The cake should be a nice pale brown, you can test it with a skewer.  Remove from oven and prick well all over with a skewer.  Pour the topping over the cake spreading and working it in with a spoon and leave to cool.

 

TOPPING

4 ounces icing sugar and the juice of a lemon mixed well.
PLEASE NOTE.  I really do mean a COLD OVEN. cool cool cool cool cool cool

I haven't baked for ages ... and I haven't had lemon drizzle cake for yonks. I might give that a go.

I use a bit more butter in mine and use a sugar and lemon juice syrup to pour over but I will try this method next time andsome, never tried baking a cake from cold scratch ....thanks for posting.

Best to skewer it and start applying the icing sugar and lemon while it is still warm, it soaks up a lot more.  In fact it is so soft and light that you will need a fork or spoon to eat it. eat2 eat2 eat2

Weird?? I was visiting friends in Tossa de Mar yesterday and they produced lemon drizzle cake with coffee. It was purchased in 'Lidle's'.....It was bloody delicious and cost 1.99 Euros for a 300g cake...
