| 1 tin Chopped tomatoes 1 to 2 rounded teasoon of Onion powder 1 level teaspoon Garlic powder 1 rounded teaspoon Sugar - more if tomatoes are extra tart S&P
Mix everything together and simmer for about 15 - 30 minutes.
Onion powder and garlic powder are available in little jars in supermarkets or, do as I do and buy much, much cheaper in bulk from butchers wholesalers (they use them as seasoning in sausages) - eBay is the place.

| Sounds OK pops but why not use real onion and garlic as I do ? |

| Three main reasons:
1 Saves the hassle of preparing onions & garlic (I'm not very nimble with a knife these days)
2. The powders give a mature "cooked" flavour without hours of cooking.
3. It's quick.
Also, often I don't want pieces of onion and garlic in the sauce. Using powders avoids this.

| Apparently the Italian 's say to keep sauces as simple as possible. I tended to add the contents of my cupboards into the sauce, onions, peppers etc. I have refined it a bit more now and it does taste better I think it's a question of taste and if you feel adventurous. All ways are good though, |
